
Banana Bread
A moist, lightly spiced banana bread that makes the most of overripe bananas.

The best use for the black, spotty bananas sitting on the counter — this comes together in one bowl and fills the kitchen with cinnamon while it bakes.
Ingredients
- 3 very ripe bananas, mashed
- 75g butter, melted
- 150g soft brown sugar
- 1 egg, beaten
- 1 tsp vanilla extract
- 190g plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1 tsp ground cinnamon

Preheat the oven to 180°C (160°C fan) and line a loaf tin with baking paper.

Mix the mashed banana with the melted butter, then stir in the sugar, egg and vanilla.

In a separate bowl, whisk together the flour, bicarbonate of soda, salt and cinnamon.

Fold the dry ingredients into the wet mixture until just combined — do not overmix.

Pour into the loaf tin and bake for 50-55 minutes, until a skewer comes out clean.

Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
