
Tomato Basil Soup
A rich, silky tomato soup with fresh basil — the definition of comfort food.

Good on its own, better with a grilled cheese sandwich for dunking — this one barely survives the pot before it’s gone.
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, crushed
- 2 x 400g tins chopped tomatoes
- 500ml vegetable stock
- 1 tsp sugar
- 100ml cream, plus extra to serve
- A large handful fresh basil, plus extra to serve
- Salt and black pepper, to taste
Method

Heat the oil in a large pot and fry the onion for 5-6 minutes until soft.

Add the garlic and cook for 1 minute more.

Pour in the chopped tomatoes, stock and sugar. Bring to a simmer and cook for 20 minutes.

Blend until smooth, then stir in the cream and basil.

Season to taste and simmer for a further 2-3 minutes.

Serve with a swirl of cream and a few torn basil leaves on top.
